Shetland seafood has been in the Williamson family’s veins for three generations – we have been connected with the industry since 1922 when Lowrie Williamson started a small processing plant for smoking and salting fish.
Still, a family business, with over 90 years of experience, L. Williamson Fish Sales, specialises in sourcing and supplying top quality whole white fish five days a week from Shetland’s local fish markets.
Freshness Assured
With Shetland being so close to the fishing grounds, the fish can be less than 24 hours old from time of catch to delivery to the fish markets, ensuring absolute freshness to our customers.
Fish are gutted at sea, packed on ice and landed into Shetland’s two, modern temperature-controlled markets. These are strategically located on the east (Lerwick) and west (Scalloway) of Shetland and operate five days a week to European industry standards.
Dedicated to the Best
Fish is sold through Shetland Seafood Auction. Around 300,000 boxes of fish are sold annually through this very efficient electronic process. The auction company monitors and ensures the highest standards are maintained in terms of quality, grading, freshness and presentation.
The auction process starts daily at 8.00am, which gives us plenty of time beforehand to inspect the catches, so that we only buy the best. It also gives us valuable time to keep in touch with our customers before the auction begins.
From the Richest Grounds.
We are where the North Sea meets the Atlantic Ocean, so Shetland, the most remote of the Scottish islands, is perfectly positioned, close to the richest fishing grounds, attracting quality fish landings, and with excellent onward transportation to the UK and beyond.
Shetland is the second highest landing port in the UK for white fish species, with fish caught and landed on a daily basis by many boats including Shetland’s own large, modern and efficient fishing fleet.
Regular Landings
Shetland has a robust mixed fleet of trawlers, seine netter and line fishing boats. The trawlers tend to land twice a week with seine netters landing daily throughout the winter and three times a week throughout the summer. Line boats are smaller and usually land daily.

Efficient Distribution
As soon as the fish is sold, we re-ice, palletise and label for onward transport in temperature-controlled trailers that day.
The fish travels from Shetland to Aberdeen by overnight ferry, five days per week, and the onwards to transporters for delivery in Scotland, England and Europe.
The transport chain is never broken until the fish reaches our customers, making sure the quality is maintained.
